Video: Review of Unique Healthy Enchilada Casserole Recipe

I recently posted my first official recipe review video on my YouTube Channel. In 2020, I have been cooking much more than in previous years. There has been an explosion of creative “anabolic” recipe videos across YouTube, and it’s been fun to explore those this year.

Anabolic recipes are generally higher in protein, but also have low calorie density and high volume. That combination helps you eat more food and eat food that tastes good while still staying on track with your calorie targets.

I attribute some of my recent physique success to being able to eat much more interesting and filling foods based on many of these recipes. I now eat like 8 cups of protein ice cream every day, but have enjoyed many other fun recipes as well. Many are derivatives of the classic anabolic French toast recipe from Greg Doucette, but others include cookie dough, pizookies, cheesecakes, brownies, etc.

But the recipe that I reviewed for this video was different than most recipes I’ve seen and tried. It included a pound of ground beef and was among the few recipes others in my house were happy to eat. So, it more closely resembled “real food” than most.

Josh S is a YouTube creator with less than 100 subscribers, like me. He’s got a great personality and he does a great job showcasing it in his videos. Since Thanksgiving, I’ve been diving deeper into the anabolic recipe community and finding small creators to connect with. Connecting with some of them has been the most rewarding experience of my nascent YouTube hobby.

The Recipe Ingredients and Details

  • 4 low carb tortillas – 240 calories
  • 1 pound of lean ground beef (93/7 is leanest I found) – 682 calories
  • 1 cup of enchilada sauce – 100 calories
  • 4 tbsp of salsa – 20 calories
  • 0.5 cup of fat free shredded cheese – 80 calories
  • 0.5 cup full fat shredded cheese – 200 calories

Total calories and macros – 1322 calories, with 54g of fat, 80g carbs, 34g fiber, 154g protein

  • For quarter slice – 330 calories, with 14g fat, 20g carbs, 8.5g fiber, 39g protein

The recipe tasted great and looked great. It also reminded me of enchiladas I had as a child at Mexican restaurants in Houston like Ninfa’s.
